SPAGHETTI SALAD

My mom has been making this spaghetti salad since I was a little kid (probably even longer) and it's great, I suggest you try it!! I made this after I finished the Crispy Parmesan Potatoes because it's an easy recipe and I figured it's one of those foods that's nice to have in the fridge for easy lunches and stuff.

NOTE: I prefer to let the spaghetti salad cool for a while in the fridge before eating it, but I tried it while it was still warm and it wasn't half bad.

The ingredients: spaghetti, McCormick Salad Supreme,
WishBone House Italian dressing, green bell pepper, red onion, and a tomato
Boil your spaghetti and then drain it. After draining, run cold water
over the spaghetti to cool a bit
NOTE: While your spaghetti is cooking, dice your pepper, onion, and tomato
Pour in the entire bottle of Italian dressing and the
entire bottle of salad supreme and mix thoroughly.
Mix in the pepper, onion, and tomatoes until you think you've added enough.

CRISPY PARMESAN POTATOES

I've decided that I'm going to try to cook at least one night a week, even if no one else is home. I've become so used to heating up frozen foods, snacking, and eating left-overs that I forgot how great home cooked meals are. Tonight I decided to make "Crispy Parmesan Potatoes" from a recipe I found on a blog. I would imagine the potatoes would taste great with something like meat, but I just had a handful by themselves. Though the recipe is easy and good, I would recommend adding salt for flavor.

Cut up five medium sized potatoes and throw them in a bowl.
Pour in a few teaspoons of olive oil and then
mix in 3/4 cup seasoned bread crumbs and 1/2 cup parmesan cheese.Lay the potatoes out on a greased or lined baking sheet (I had to use two) and
bake at 400 degrees for 30-40 minutes.

Mmm, tasty.

003--THE CALIFORNIA WINTER


While it's pretty much freezing cold in the rest of the country, here in Southern California we're enjoying plenty of sun. Seriously, this past week it's been reaching 80 degrees (Fahrenheit) before noon! I cannot even fathom living in a place with below freezing temperatures, California's weather has spoiled me rotten.

002--DINING WITH THE FAMILY

Not too long ago I found a recipe for pierogi lasagna and I really wanted to try it because I love pierogies (if you don't know what they are, Google em!!). I remembered that my mom didn't have to work this evening, so I asked if she would be willing to go to the store and make dinner with me. All she really did was slice the onion and boil the lasagna noodles, but it was fun cooking with her. This was the result:
